Chef Michael graduated the Culinary Institute of America of Hyde Park in New York in 2000. He started his professional career with the Charlie Palmer Restaurant Group of New York where he worked up the ranks at some of New York's most popular restaurants. He started at the acclaimed Aureole Restaurant in Manhattan, then moved on to a locals-friendly Charlie Palmer restaurant called Kitchen 22 as Chef de Cuisine and then on to Astra as Chef de Cuisine. Chef Michael left New York having developed into a rising star in the kitchen and had gained the respect of super chef Charlie Palmer.
Chef Michael arrived in Miami in the summer of 2005. After working as Executive Chef at Sugo Restaurant in the Sanctuary Hotel on Miami Beach as well as Metro Kitchen in the Astor Place Hotel on Miami Beach, Chef Michael feels that he has found a permanent home in Smoke't.
John Janette was destined to make a career in the hospitality industry because throughout his high school years he devoted most free time to planning and throwing the best "basement" parties in his suburban Chicago hometown of Oak Park.
John received a Bachelor of Science degree from the University of Illinois in Hospitality Management (B.S. '89) and upon graduation immediately went to work for a growing pizza concept called California Pizza Kitchen. John spent three years with the chain in Chicago learning the importance of "corporate structure" and excellence through consistency but decided to follow the girl of his dreams to Miami.
He spent three years with Tutti's, an independent Tuscan-inspired trattoria, helping them grow to four units and then an opportunity came along to open the Morton's of Chicago Steakhouse in Miami, where he worked as General Manager for seven years until he teamed up with Brandon Lurie and opened Smoke't.
These are the beautiful, big blue eyes you want watching your numbers.
A native New Yorker raised in a family obsessed with food, Alexandra is an accomplished cook and enthusiastic oenophile. While a earning her B.S. in Accounting, she worked as a maitre d', waitress, barista and bartender-skills that come in handy at home, for the benefit of her husband and son, and for butting into every aspect of Town operations, for the benefit of our customers. Her background also includes extensive business management experience in residential construction and interior design, coincidentally important elements in making a restaurant special.
Even though she knows her way around the kitchen, Alex would rather eat great food at a cool, neighborhood restaurant and she loves the fact that she gets the chance to make Smoke't her perfect hangout.
Brandon Lurie is Vice President of The Richard-Brandon Company, a multi-faceted real estate company located in Miami, FL., engaged in acquisition, development and construction of both residential and commercial real property throughout Florida.
Mr. Lurie, a native of the Miami area with a B.S. Degree from the University of Florida, got involved in the Restaurant Business through a sort of process of elimination.
As a South Miami resident and a partner in the development company that owns and built the building where Town Kitchen & Bar now sits, Mr. Lurie and his partners were looking for the right tenant, one that added to the community, filled a niche and added to the home town feel that makes South Miami so great.
We received offers from users such as Outback's, Subway, Salad Creation and CVS, but we chose to hold out for someone that would fit our vision. After months of trying, we found a real "Neighborhood Joint" Town.
Don Enfield has been in restaurants for 22 years now. Over the years somehow, both Don and John Janette have followed footsteps in restaurants such as Tutti's in the Gables, Morton's of Chicago Steakhouse in Miami and our sister restaurant at Town Kitchen & Bar.
Growing up in Oregon, Don has developed a palette for wines and been exposed to many micro beer breweries. The collaboration between both Don and John is shown in the diversity of wines, beers, tequilas, bourbons and such that are offered at Smoke't.
Don will also be heading, together with Brandon Lurie, the live music format to be held at Smoke't.
